Turkey Apple Breakfast Sausage

What do you eat for breakfast? If you want a satisfying breakfast that won’t send you crashing an hour later, most traditional breakfast foods don’t seem to work so well (much as I miss Grandma’s cinnamon rolls!). So I usually end up eating leftovers for breakfast. On special occasions, though, this is my favorite: turkey apple breakfast sausage with brown rice pancakes. Did I say brown rice?! Yes, I did! I am now able to eat rice without trouble, so this blog may be expanding beyond the strict definition of paleo. Hey, if you can eat it, I say eat it!

If you are on a grain-free diet, try the sausage with a side of carrot salad. Even better, sauté the carrot salad and make it a hash! Mmm…

Turkey Apple Breakfast Sausage

1 lb ground turkey thigh
1/2 large onion, minced
1 apple, minced
5 cloves garlic, minced, or 1/2 teaspoon garlic powder
1/3 cup chopped pecans
1 teaspoon rubbed sage
1/8 teaspoon cinnamon
1/8 teaspoon ginger
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter

In a large skillet, sauté onion in olive oil till translucent. Add the apple and and cook till apple pieces just start to turn golden. Next, add garlic, herbs, and spices and sauté a few minutes more. Mix in the pecans and toast a few minutes on low. Add butter to melt, then remove from heat.

Place ground turkey in a large mixing bowl. Pour in the sautéed onions, apples, and spices and stir all ingredients till just mixed. With a cookie scoop, arrange meatballs on glass pan drizzled with olive oil. Drizzle a little olive oil over the top of the meatballs, then bake at 375° for 18 minutes or until done.
